Middle Eastern Mason Jar Salad


      1. Layer into a 1 L mason jar and enjoy!


  1. 1 1/2 TBSP. lemon juice
  2. 1 1/2 TBSP. olive oil
  3. 1 tsp. Dijon mustard
  4. 1 tsp. honey
  5. Pinch each of salt and pepper
  6. 1/4 cup red bell pepper, finely diced
  7. 1/4 cup cucumber, finely diced
  8. 1/2 cup canned chickpeas, rinsed and drained
  9. 1/4 cup cooked quinoa
  10. 1/2 oz. feta cheese, crumbled
  11. 1/3 cup cherry tomatoes, sliced in half
  12. 2 TBSP. olives, minced
  13. 1 TBSP. sunflower seeds
  14. 1/2 tsp. za’atar
  15. 1 cup spinach
